Azienda Agricola Zidarich

Carso’s raw mineral soul in every bottle

A biodynamic Carso winery producing vibrant, natural wines from indigenous grapes, with unparalleled minerality and underground tastings in a rock-hewn cellar.

Zidarich is a revered family-owned winery perched on the limestone hills of the Carso, just above Trieste. Founded in 1988 by Benjamin Zidarich, it is renowned for natural, biodynamic wines—no added sulfur, fermented by moon phase, and crafted in a cellar carved deep into the rock. Specializing in local varietals like Vitovska, Malvasia, Terrano, and expressive blends such as Prulke (Sauvignon–Vitovska–Malvasia), Zidarich’s wines are crystalline, mineral-driven, and steeped in Carso’s rugged terroir. The tasting experience—held in an underground vault with vineyard and sea views—is intimate, elemental, and transformative.

Insider Insight

Book a full vertical tasting—Benjamin often opens older vintages to show how beautifully these wines evolve. Request a tour of the subterranean cellar to watch the fermentation and aging process inside the stone chambers. And take a closer look at the wine labels: they aren’t just design—they’re a map of the winery’s carved-out cellar, a visual blueprint of where the magic happens. Strongly recommended: try the Vitovska Collection or Prulke blend for a true taste of mineral finesse.
